If a trip to San Sebastián seems too far out of reach, we have the next best thing, with the exclusive news that a Basque-themed pintxo bar called Topa is opening in North London.
Located in much-loved artisan store and bar Provisions on Holloway Road, Topa will really walk the talk, with head chef Simon Shand (of Shoreditch’s Leroy fame) introducing a menu inspired by his many trips to San Sebastián. No stranger to importing products from artisan Basque producers, Provisions is well placed to supplement Simon’s creations with Spanish cheese platters, cured meats and a specially curated wine list, including wines by the carafe.
Unlike previous Basque-themed pop-ups held here, Topa (which means ‘cheers’ in Spanish) will be a permanent fixture, with a 22-cover space running alongside the store’s new terrace. If you’re a fan of spontaneity, there will also be some tables set aside for walk-ins; in the spirit of creating a true San Sebastian-esque informality.
You can expect a mix of pintxos and Basque dishes, including
- Slow-cooked crab, leek and Cognac Txangurro tarts
- Chorizo cooked in cider
- Summer wild mushrooms and raw egg yolk
- Hake with orzo, saffron and courgettes
- Fig, almond and brown butter sponge with crème fraiche
So if you're in North London and fancy a taste of Spain, we think this is all sounding very tempting.
