Dalston is about to get a new burger bar, setting up shop in The Three Compasses. Filthy Buns, led by exec chef John Gladwell, will be settling down for a residency in the pub following their start on the street food scene this summer.

They first took over Walthamstow's Manze's pie shop (in the evenings only) for a pop-up last year and returned a few times since. Now The Jellied Eel are back in the same location for a permanent residency featuring their combination of cocktails and croquetas.
Those croquetas will be back on the menu (including Jamon Iberico, leek, chorizo, blue cheese, spinach and chicken
Mortimer House, a member’s club and workspace in Fitzrovia, has already hosted guest chef residencies from Elizabeth Haig and Oli Brown of duck duck goose, and next up is Luke Selby, who you may recognise from Great British Menu. As well as starring on the BBC series, Luke was previously head chef at Ollie Dabbous’ Hide, which he left earlier this year to pursue his own projects.
Luke will be joined by his two brothers Nathaniel and Theo

Great Guns Social in Borough has just announced a trio of residencies running up to October, and they all sound well worth your time. Here's what's coming.
In Islington's Compton Arms, they have the very popular Four Legs residency (which we Test Drove recently). Now the Compton Arms' sister pub The Gun in Hackney has brought in a long term food residency Anju - which they're hoping will be a similar success.

You might have tried their food at Market Hall Victoria or Old Spitalfields Market, but Flank's next move is to take on a long term residency in East London at The Print House in Stratford.
Flank is all about nose-to-tail eating and cooking over fire and Flank OG, which will be in Stratford, expands their offering to more of a small plates game. From a quick look at what's on their launch menu, it definitely sounds worth checking out.
So what makes a pizza, a wild pizza? Well at Flat Earth - a new residency at The Hive natural wine bar in East London - it's all about using local, fermented and foraged ingredients. Even the bases are special - they're made with heritage grains created using E5 Bakehouse and Gilchester’s organic flour.

Sweet-toothed fans of afternoon tea will want to make a beeline for Harrods this summer. The Knightsbridge department store has enticed four of the best French pâtisserie chefs – Pierre Hermé, Angelo Musa, Cédric Grolet and Yann Couvreur - to put on residencies in their tea rooms.
