We're always on the lookout for interesting new openings here at Hot Dinners. So when we spotted that the Head Chef of critics' fave The Wapping Project, Cameron Emirali, was teaming up with the former manager of Exmouth Market's The Ambassador, Luke Wilson, to open a place in Soho, it was certainly something we thought our readers would want to hear more about. So we pulled up a chair with Luke for a bit of a chat about 10 Greek Street.

For anyone who doesn't know who you are - can you tell us a little bit about yourselves?

The two owners are Cameron Emirali and myself (Luke Wilson). Cameron has been a chef for over 15 years and has been Head Chef of The Wapping Project for the last 6 years. Before that he has worked in London restaurants such as Eyre Brothers, The Zetter and Pont de la Tour, in addition to several establishments in Australia and New Zealand.

I have been involved in the restaurant industry for the last seven years.  Starting off at The Zetter, I then became General Manager of The Ambassador, in Exmouth Market, for three years. For the last three years I have worked for Liberty Wines as Account Manager for the City and East London.

Together Cameron and I will lead the day-to-day operation, Cameron in the kitchen and me on the floor.

What made you decide to set up 10 Greek Street?

The idea for 10 Greek Street was born from a conversation between Cameron and I. Independently we had always dreamed of opening our own restaurant. We both wanted to create a value for money, friendly place with a daily changing menu, relaxed but thoughtful service and an exciting wine list. A place we would want to frequent ourselves, containing elements and influences from all of our favourite locations and cuisines in London and around the world.

What sort of food will be on the menu - and how often will it change?

It'll be Modern European and there will be a daily-changing menu that will concentrate on seasonality and fresh ingredients.

How about the wine list?

We'll have a list of about 30 wines which will constantly evolve. There will be no emphasis on any particular wines, but instead the list will showcase a wide range of grapes, styles and regions. The majority of the list will be available by glass and carafe and there will also be a blackboard of a few fine wine specials. 

How many will you seat?

35 in the main dining room, plus a private room for 10-12.  The private dining room will be available for events such as birthday parties, customer wine tastings, and business meetings during the day.  The menu here will offer a dining together experience, with dishes such as whole suckling pigs or ribs of beef to share.
