Sabrina Ghayour teams up with the Modern Pantry for Passage to Persia Sabrina Ghayour has been having great success running her supperclubs for Persian and Arabesque food in North London. Indeed, Hot Dinners has been and can attest that they are well worth the visit (the slow cooked lamb was wonderful).

Now she's bringing the best of Persian cuisine into Clerkenwell. Sabrina's teaming up with some of London's top chefs for Passage to Persia, a new series of dinners that are coming to the Modern Pantry from October.

The evenings will be hosted by both Sabrina and the Modern Pantry's Anna Hansen, with the aim of letting each guest chef put their stamp on Persian cuisine. They'll be teaming up with Sabrina to create special menus using known and lesser-known Persian ingredients alongside seasonal British produce to showcase Persian flavours.

The chefs lined up are Ben Spalding (ex Roganic and gearing up for a residency in Islington), Alexis Gauthier (of Soho's Gauthier), Omar Allibhoy (from Tapas Revolution) and MasterChef winner Tim Anderson. Both Sabrina and Anna will be joining the chefs in the kitchen for each meal.

The dates for each event are:

  • Monday 22nd October Ben Spalding
  • Monday 29th October Alexis Gauthier
  • Monday 5th November Omar Allibhoy
  • Monday 12th November Tim Anderson

In addition to the food, "Black Moth Vodka" Persian-inspired cocktails will be served on arrival and wine pairings will come courtesy of Gonzalez Byass. Fine tea merchants Lalani & Co. will be serving tea pairings from the newly launched ‘Tea Library’ at The Modern Pantry.

We caught up with Sabrina, who told us "I am really looking forward to cooking with these chefs. Each of their styles are do different and unique that I think it will be just as much of an educational experience for me as it will for them. I am so proud of my Persian heritage and so honoured that these amazingly talented people agreed to come on board and learn about Persian flavours and ingredients in order to create something remarkably special for the public"
