Tom Sellers opening new restaurant Story on Tooley St

Tom Sellers reveals details of his new restaurant Story[Updated 22/2/13 with more menu details and opening date]

Tom Sellers' previewed his new restaurant Story with a pop-up called Foreword way back in July 2011, to much acclaim. Now, the new and permanant restaurant is nearly here, launching at Tower Bridge in early March.

We caught up with Tom to find out what we can expect.

What can you tell us about the layout of the restaurant and what made you choose the location?

The layout of the restaurant is rather unique in that there are two kitchens, with one located in the dining room. While it will be separated from where guests dine with a wall made from reclaimed stone and glass, it will also be a way of bringing the food and guests that little bit closer.

In a way, the location chose me: all the history that Tower Bridge and Bermondsey have to offer just felt right, and I loved the fact that it is a stand-alone building – such a rare thing in London these days! Story is also at the former site of a toilet block – which is kind of ironic.

How would you describe the food you'll be offering at Story?

The food at Story will be be British, ingredient-led and steeped in history. Simplistic in idea, yet technical in execution, with a bit of youthful fun thrown into the mix.

The menu structure will be as follows: six courses for £45; ten courses for £65; and a three-course lunch offering of £28.

Key dishes will be 'bread and dripping' in the form of a candle made from beef fat served with bread veal tongue and horseradish, and 'three bears' porridge oats cooked in whey. There'll also be crab, smoked leek, rapeseed, pear and lovage as well as beef cheek,  stout and cauliflower yeast.

And finally, what about drinks?

There will be a small bar area that you can drink at. The beverage offering will be simple and clean with great spirits and beers, all local and steeped in history themselves, and cocktails will be seasonal and smart.
