We bring news of a Brazilian restaurant all-change in Mayfair, with Maroto taking over the site formerly occupied by another Brazilian restaurant Bossa (which closed in February). But the plot thickens: if you think you’ve already seen Maroto in that location, you have. Sort of. There’s a bar by that name that previously operated below Bossa. Now, after a few experimental weekend dinners and private events, Maroto the restaurant is ready to fly with its standalone menu and brand-new concept.
The chefs behind the venture, Mark Tolentino and Mehmet Talayhan, both worked with Ben Murphy at Kensington’s highly acclaimed Launceston Place, so we are watching expectantly. You can expect local and seasonal ingredients with a Brazilian influence in a no-fuss-meets-fine-dining vibe.
There is a bit of fuss about the sauces, though. There are five served with each main course and they say any of them will pair perfectly with each dish, which sounds like quite the kitchen challenge. Changing seasonally, the five sauces will always cover all five flavour profiles (so: sweet, spicy, sour, salty and umami). For the launch menu, the sauces are: burnt orange gel, BBQ maitake with yuzu and soy, parsley sabayon, black truffle emulsion, and avocado with chilli and coriander.
As well as big sharing dishes (such as the 3-4 person Tomahawk steak), the à la carte menu will include the likes of:
- 24-hour barigga de porco: pork belly with tutu de feijão and piccalilli
- Grilled tiger prawns with tucupi bisque, prawn mayo and picante mango
- Cured sea bass with pickled courgette, finger lime and malagueta pimento
- Pão de Queijo with garlic and 30-month-aged Parmesan
- Aylesbury duck breast
There’ll be traditional Brazilian side dishes (cassava fries, braised pinto beans) and refreshing-sounding desserts, such as grilled pineapple with sage, mint and coconut or yoghurt soft-whip.
On the drinks front, expect classic old-world and new-world wines and premium Champagnes, alongside a Brazilian-influenced cocktail list. We’ll be sipping on the Tipsy Triker (Santiago Cuba, Acai syrup and cherry puree) while quietly nerding out about the five sauces.
