Jason Atherton is opening Sael British brasserie in St James's Market

This is what the space looked like in its old guise, as Aquavit

Jason Atherton has a lot of irons in the fire at the moment. There's been talk of him opening on Savile Row and also on Bruton Place, not to mention what he has planned to replace Pollen Street Social

But while we wait to learn if any or all of those projects are going to come to fruition, we do have some concrete news on what the chef has planned next. As revealed by his new landlords, The Crown Estate, he's taking over the pretty large space in St James's Market for what will be a new brasserie, Sael. 

It'll be a team-up with his wife, Irha Atherton and we're told it will celebrate "all things British" meaning that it'll be following the current trend of only sourcing from the British Isles (much like its close neighbour, Fallow). In charge of the kitchen here will be Chef Dale Bainbridge, most recently Executive Chef at Pollen Street Social.

That's all we know right now - in the run-up to the opening, we'll bring you more news about the menu and just what they're changing inside.
