Jason Atherton has a lot of irons in the fire at the moment. He'll be opening on Savile Row later this year and has Three Darlings opening in Chelsea, not to mention Mary's, which has replaced Pollen Street Social.
And in addition to all that, he's taking over the pretty large space in St James's Market that was Aquavit for a new brasserie, Sael.
It'll be a team-up with his wife, Irha Atherton and we're told it will celebrate "all things British" meaning that it'll be following the current trend of only sourcing from the British Isles (much like its close neighbour, Fallow). In charge of the kitchen here will be Chef Dale Bainbridge, most recently Head Chef at Pollen Street Social.
For the food here, there's an emphasis on the wood-fired grill which will be used on Orkney scallops, Cumbrian lamb and Highland wagyu. There will also be a Cumbrian lamb hotpot and a continuation of London chefs' love affair with snails, there will be a hundred-layer heritage snail and ox cheek lasagne.
As far as drinks go, there will also be a big focus on British wines, beers and cider. They'll also have a separate upstairs bar called Apples and Pears with its own snacks list. St James coudn definitely do with some more decent bars, so that should be worth a look.
