The Standard has had a run of impressive pop-ups and residencies, and that's continuing into spring as chef Ixta Belfrage takes over their restaurant Isla for three months.
Having worked for five years with Yotam Ottolenghi in his Test Kitchen and also a runner-up for best debut cookbook at the Fortum & Mason Awards, Ixta will draw on inspiration from various places including Italy, Brazil and Mexico for her menu. One dish in particular to look out for, and a favourite from her book, is the king prawn lasagne with habanero oil, as well as more dishes that include:
- Moqueca fish slider on curried coconut brioche
- Guava roast duck tacos with chipotle crema
- Crisped sticky rice stuffed aubergine.
- Honey-roasted cashew ice cream choco-taco
- Plantain fritters with warm chocolate sauce
That's a pretty great-looking menu and it'll be backed up by cocktails that come as a partnership with Casamigos Tequila. Those include twists on a paloma, margarita and old fashioned, like the Guava Margarita, made with guava jam, angostura bitters and Casamigos Blanco Tequila.
We'll leave the last word to Ixta herself: "It's a whirlwind tour of all the things I love to eat, inspired by Brazil & Mexico. You can find some of my favourite produce throughout the menu too; plantain, guava, habanero. A short, spicy & zesty affair, designed for lunch and dinner."
