Lucky Islington residents will have a very interesting new bakery on their doorstep. Quince Bakery is the brainchild of baker Anna Higham. She ran the bakery at Flor before becoming Executive Pastry Chef at The River Café. So it's fair to say she knows a thing or two about baked goods.
As for the bread she'll be baking, it'll be sourdough breads made exclusively with UK-grown stoneground flour - think country loaves and rustic baguettes along with soda breads, butteries and tattie scones. And while you won't find croissants on the counter (this is a bakery focusing on the "rich tapestry of British baking traditions") the bakery is promising instead handmade pies (both sweet and savoury) and also something we absolutely have to try - a rice pudding tart. There will also be gluten-free cake on offer too.
Obviously, they'll be serving great coffee, from Allpress, along with 'consciously curated' wines and there'll be a small grocery offering of cheeses, olive oils, and local honey. Anna's also worked closely with Maynards fruit farm in East Sussex for a range of jams, chutneys, marmalades, fruit preserves, and cordials.
