EDITOR'S LETTER
Today, we're looking at a dish that appears on menus all over town, but is only rarely executed really well. A great Caesar salad is one of the real joys of summer and every one of the places on our shortlist is serving it up with style.
Another place focusing on one thing and doing it very well is Mayfair bar Brutes. They've seen this city's capacity for martinis and decided to serve them up with a side order of serious hospitality (and Monster Munch). We very much approved of it.

AND DID YOU HEAR?
Pivoting for the hot weather, Rita's in Soho is turning into a raw bar for the whole of August. There will be a completely new menu, with dishes like bluefin tuna crudo with mustard, cherries and almonds, beef tartare and tuna tostadas plus a few "lightly cooked" items like a fried fish sandwich. Ice-cold martinis will be on hand too.
And we're very much feeling the plight of Dumpling Shack's owners who on Day 1 of the school holidays have already 'run out of things to do." They've agreed to let their daughter run a lemonade stand out in front of their Spitalfields Market stall this morning (Tuesday) from 11am if you want to go and show solidarity.
