Their pollo a la brasa is sourced from Norfolk, marinated in a secret blend of herbs, spices and beer, and slow-roasted over charcoal in London’s first and only Peruvian rotisserie oven, the Rotombo. Unlike a conventional roast, the Rotombo lets charcoal smoke deeply infuse the meat, locking in moisture for juicy smoky perfection.
