When it opened, Bravas Tapas was adorned with many plaudits, even if it wasn't in the most central of locations. But now the chef, Victor Garvey has moved into Covent Garden with his own modern Spanish restaurant.

"Pacharan (sloe-flavoured liqueur) marinated salmon rulada are cylinders made of the sliced fish wrapped around finely shredded crisp sweet potato and red onion escabeche with a flat cap of sliced radish sitting in a splodge of wasabi aioli lending crunch and kick to an unusually beguiling rendition of a prosaic fish."
