Lee Tiernan's Black Axe Mangal project first started in Copenhagen as a series of pop-ups where it quickly reached cult status amongst both locals and travelling chefs .His take on the kebab is 'an unauthentic, bastardised take of Turkish Mangal and Ocakbasi, with global influences.'

"For Tiernan’s cooking is not only nose-to-tail, but balls-deep, too, and quite the loudest cooking you will ever taste. And I think that is probably how he developed it: so that however loud he turns up the volume on his music, you will always be able to hear his food, screaming even louder over the top."
