Japanese restaurant Flat Three to open in Holland Park

News reaches us of a new restaurant coming to Holland Park in April. Flat Three will apparently have "a new approach to Japanese-inspired food" but will also be influenced by Korean and Scandinavian cuisine. They'll be serving á la carte and tasting menus - and we like the sound of the non-alcoholic pairings (alongside the usual wine pairings). It'll seat around 40, including one large table which can be taken over by groups.

The restaurant is the brainchild of Juliana Kim Moustakas and head chef Pavel Kanja. They originally had a test kitchen in Moustakas's home, where they tried out the menu and held a small amount of supper club evenings. The name comes from that original supper club location.  Pavel himself has previously worked with Scott Hallsworth at Wabi and his dishes will include “Bräckt” a dish of turbot and trout influenced by a visit to Stockholm and a dessert inspired by fermentation with toasted rice, sencha ice cream, ama koji porridge, cherry beer sorbet and buckwheat. 

As for drinks, expect wines from small producers, with an emphasis on Rieslings and Pinot Noirs, alongside sakes plus cocktails using house-made tonics and tinctures, and a non-alcoholic selection of house-pressed juices, teas, infusions and ferments.

Flat Three will be at 120- 122 Holland Park Avenue, London W11 4UA from April 2015twit. They're having a soft launch from 2 April 2015 with a complimentary 500ml carafe of wine per couple per table.
