The company behind Sushi Samba, which will be opening on the 38th and 39th floors of the Heron Tower in the City in July, has just announced its plans for the top floor spot. Duck & Waffle will be a all-day restaurant in the true sense of the word, open 24 hours, 7 days a week. It'll take over the 40th floor with amazing wraparound views over London - showcased by floor-to-ceiling windows. There'll be an open kitchen and a 24 seat chef bar with artisanal cocktails and a private dining room.

In charge of the kitchen is Daniel Doherty who's been at Old Brewery at the Royal Naval College in Greenwich, The Empress in Victoria Park, and The Ambassador in Exmouth Market, London.

Breakfast for city workers from 6am to 11am will include Foie Gras ‘All Day Breakfast’ with homemade nutella and jam, fresh brioche, pork dust and rice crispies and Duck & Waffle with fried duck egg and mustard maple syrup.

The all-day dining menu will have dishes like Old Spot pork pie with smoked quail egg, bacon-wrapped dates with linguiça sausage and endive salad, homemade black pudding with gooseberry chutney, British seafood pot roast with n’duja and wild sea vegetables and lamb sweetbreads with broad beans and smoked bacon and Fourme d’Ambert Eccles Cakes.

In the wee small hours of the morning, from 2am to 6am you can still turn up and eat a late-night menu of items such as Roasted Galloway Veal Marrow Bones with ox cheek marmalade, pickled girolles and parsley.

Duck & Waffle will open in August 2012 at the Heron Tower, 110 Bishopsgate, London EC2N 4AY.

Reservations can be made from 22 June on 020-3640 7310. You can also follow them on Twitter at www.twitter.com/duckandwaffle
